Strawberry Pancakes

Appropriate for 12 servings

Ingredients

For the pancakes

  • 2 cups flour, all-purpose
  • 2 large eggs
  • 3 cups strawberries, sliced
  • 2 cups buttermilk, well-shaken
  • 3 tablespoons sugar, granulated
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 4 tablespoons butter, unsalted, melted and then cool ( have some more for the greasing)
  • Vegetable oil, for the greasing

For the syrup

  • 1 cup brown sugar, packed
  • A pinch of salt

Preparation

For the syrup

  1. Put 3/4 cup of water, brown sugar and salt in a saucepan over medium heat.
  2. Bring the mix to a simmer and stir until all of the sugar dissolves.
  3. Let it simmer for about 25 to 30 minutes while stirring from time to time.
  4. Remove from the heat and let it cool for a bit.

For the pancakes

  1. Heat the oven to 100° Celsius / 200° Fahrenheit degrees.
  2. Put the granulated sugar, flour, baking soda and baking powder in a large bowl and whisk for a bit.
  3. Put the eggs, buttermilk and cool melted butter in another bowl and mix for a bit as well.
  4. Then add the wet mixture in the center of the dry mixture and stir with a rubber spatula just enough for the ingredients to combine, not be become a tough mixture.
  5. Add a few drops of the vegetable oil and a pat of butter in a non-stick frying pan over medium heat and as soon as it melts wipe it with a paper towel.
  6. Ladle about 1/4 cup of batter for each pancake and place a few slices of strawberries on top of the pancakes. Cook for about 3 minutes and then flip and cook for another 2 minutes until the color turns to a golden brown.
  7. Repeat with the rest of the batter and keep the finished pancakes in a sheet tray in the oven so as to keep them warm until you finish.
  8. Serve the pancakes by adding the syrup on top.
