Red Wine Sauce Cheesecake

For The Cake

For The Red Wine Sauce

  • 100ml Port Wine
  • 200gr blueberries (or fruits of the forest)
  • 1 tablespoon sugar


For The Cake

  1. Preheat the oven to 350° Fahrenheit / 180° Celsius.
  2. Put a greaseproof paper on the base of a round springform tin.
  3. Crush the biscuits along with the golden caster sugar in a food processor and mix them in a bowl with the melted butter.
  4. Make an even layer with the biscuits into the base of the springform tin and put into the oven for 10 minutes. Remove from the oven and put it in the refrigerator.
  5. Beat the soft cheese with the powdered sugar in a mixer until you have a puffy and even mixture, and put it aside.
  6. Beat the heavy cream in the mixer for about 10 to 15 minutes, until it doubles in size.
  7. Add the soft cheese mixture into the heavy cream and mix until you have a nice mixture.
  8. Take your springform tin out of the refrigerator and make an even layer with the cream mixture on top of the biscuit layer and put it back in the fridge until you make the sauce.

For The Red Wine Sauce

  1. In the meantime, combine all the ingredients in a pan and bring to boil.
  2. Simmer for about 20 minutes, until you see it formed into a jam, remove from the heat and let it cool off for about 10 minutes.

Now Let’s Bring Them Together

  1. Pour the wine sauce all over the cheesecake and put it in the fridge for at least 4 hours and there!

Your Red Wine Sauce Cheesecake is ready to serve!

Well, let’s get back to one of my favorite desserts! Yes, I know, I have a lot of favorite desserts!! 😛 This time, however, I refer to the all-time classic cheesecake!! But since I have already talked to you about the Raspberry and Lemon Cheesecake recipe as a food pairing to the lovely Moscato D’ Asti, I thought to myself : “Why not make a different version of cheesecake? One that already HAS wine?”

So, without any further delay, I give you the Red Wine Sauce Cheesecake recipe! It’s easy to make and you get to use my really appreciated Port wine!
