For The Salmon

  • 4 pieces Salmon fillets
  • 1 red pepper, sliced without the seeds
  • 1 yellow pepper, sliced without the seeds
  • 2 lemons, the juice
  • 8 spring onions, cut into pieces
  • 8 springs fresh dill

For The Salad

+ Some olive oil, lemon and salt for the finish…


For The Salmon

  1. Preheat the oven to 200° Celsius / 400° Fahrenheit degrees.
  2. Divide the pepper slices, onion pieces, lemon juice and fresh dill equally into four portions.
  3. Take four pieces of silver foil and place on them the pepper slices and onion pieces.
  4. Place the Salmon fillets on top of them and last, add the dill and lemon juice along with a dash of water on each portion.
  5. Fold all the silver foil pieces into parcels and place them on a baking sheet.
  6. Bake in the oven for 15 minutes and then remove from the oven.

For The Salad

  1. Take your four serving plates and divide the lettuce pieces and cherry tomato halves into them equally.

Now, Let’s Bring Them Together…

  1. Place your baked salmon fillets into your serving plates along with the peppers and the rest of the ingredients on top of the lettuce and tomatoes.
  2. You may pour some olive oil, lemon and salt and there!

Your Baked Salmon Salad is ready for you to serve!

Now, I have mentioned before that Salmon is one of the most beneficial fish when it comes to nutritional value and health overall! It contains vitamin B12, potassium, selenium, and omega-3 fatty acids. Each and every one of these substances, believe it or not, contribute a great amount on how our brain functions, and that is why salmon is called a “brain food“! No wonder this is my third recipe post that contains salmon! (By the way, blueberries are also considered to be good for the brain 😉 ) For me, being a person that brought this great fish into my diet only 2 years ago, along with other healthy food choices, trust me, I’ve seen great results considering my brain clarity throughout the day and I think you will too!

Of course, what’s a healthy choice if it’s not rewarded with a bit of something to indulge yourself?? A great benefit to you, one will say and I agree 100%, but COME ON!! Let’s get to the wine!!!

So, my wine suggestion for this great and easy Baked Salmon Salad recipe is a glass of chilled Dry Rosé!! You will love the combination and it is just perfect for dinner during this time of year!!!
